Our cacao grows in El Tuma–La Dalia, in the hills of Matagalpa, where volcanic soil, mountain mist and a living forest give the beans their aroma. It is fermented and dried there by Don Diomedes López and the Jorge Salazar cooperative, then turned into bars and paste in our workshop in Managua.
Terra Criollo was founded by a Franco-Nicaraguan couple, Ana and Arthur, to bring that cacao to the table with the care it deserves: a fermentation above 75%, small batches, and boxes illustrated like oracle cards.
