Hot chocolate with 100% cacao paste

A thick, lightly sweet cup made with pure cacao instead of a powdered mix. Whole milk gives the richest cup; oat or almond drink works just as well.

Makes 2 cups, in 10 minutes

Ingredients

  • 40 g of 100% ceremonial cacao paste, finely chopped
  • 400 ml of milk or plant-based drink
  • 2 to 4 teaspoons of sugar or honey, to taste
  • A pinch of cinnamon and a pinch of salt (optional)

Method

  1. Chop or grate the cacao paste: the finer it is, the faster it melts.
  2. Heat the milk over medium heat until it steams, without letting it boil.
  3. Add the cacao and whisk for 2 to 3 minutes, until no pieces are left.
  4. Sweeten, add the cinnamon and salt, and taste.
  5. Whisk once more to froth it and serve straight away.

Tip: No paste at hand? Use 2 tablespoons of cacao powder per cup, stirred first into a little hot milk.
