Iced pinolillo, the drink of Nicaragua

Pinolillo is toasted, ground corn with cacao. It is drunk cold, with water or milk, at any time of day. Ours is made with cacao beans from our own farm.

Makes 2 glasses, in 5 minutes

Ingredients

  • 4 tablespoons of pinolillo (about 40 g)
  • 500 ml of cold water or milk
  • Sugar to taste
  • Ice
  • A pinch of cinnamon (optional)

Method

  1. Mix the pinolillo with a little water or milk until there are no lumps.
  2. Add the rest of the liquid and the sugar, and stir well.
  3. Serve over ice, in a glass or in a jícara gourd, the way it is drunk in Nicaragua.
  4. Stir before each sip: the corn settles at the bottom.

Tip: For a hot pinolillo, use hot milk and skip the ice.
